Why does Amazon charge me randomly?

Amazon charges you when items ship, not when you place the order. If a $100 order ships from 3 different warehouses, you will get 3 separate charges.

Why doesn't the bank charge match my order total?

Because Amazon splits shipments based on fulfillment centers, your order total is broken into smaller amounts corresponding to each shipped box.
